2018’s Most Viral Vegan Recipes

I should probably start this off by stating that I am not vegan. I am just one of the thousands of people who like the idea of being vegan without fully abandoning meat. One of the most common mistakes people make with vegan recipes is believing that they are all healthy. However, the best tasting vegan meals (the fried ones) aren’t the healthiest. Eating vegan doesn’t necessarily mean eating healthy but with the right recipes, you can eat good tasting food that’s also good for you.

 

Pulled Pork (Jackfruit)

Many of you might be new to jackfruit, but it is actually a fruit. You might also be wondering how good this ‘pulled pork’ might be considering that it’s made with fruit. I can assure you that this recipe is so delicious. The key to this is using young, green jackfruit in brine or water. After adding some barbeque sauce and shredding the jackfruit, you’ll be amazed at how similar this is to real pulled pork. You don’t have to just make a sandwich with the pulled pork, you can also put it on tacos, pizza, or nachos!

Creamy Vegan Butternut Squash Linguine with Fried Sage

The pureed butternut squash in this recipe will have you believe that there’s real cream in this recipe because it’s so creamy. This recipe is so simple, you basically just make a butternut squash puree while you cook the pasta then mix the two together in a warm pan with some leftover starchy pasta water. If you feel like you need some extra protein in this recipe you can throw in some grilled chicken.

Tahini-Roasted Cauliflower with Lemony Herb Oil

Tahini is a condiment made from toasted ground hulled sesame seeds. Tahini is the perfect spice for this cauliflower, plus it tastes better than it looks as a centrepiece. It’s rubbed down with the nutty tahini coating, drizzled with lemony herbs (I’m a sucker for anything lemon flavoured), and garnished with roasted almonds. A lovely dish like this one takes a bit of prep, but every single minute is worth. You’ll also have your dinner guests raving about this beautiful dish.

Spicy Zucchini Fritters

This is an example of the many vegan dishes out there that may seem healthy but aren’t because they’re fried. Despite the grease, these are actually delicious but we all know that almost everything that’s fried is really good. This zucchini is coated in rice and chickpea flour, seasoned generously, and fried. You can top these with a non-dairy dressing to keep up the vegan trend, or you can throw on some yummy tzatziki.

Sweet Potato Mac and Cheese with Spinach

The sweet potatoes in this recipe serve as a base to create the creamy sauce that we all know and love. If you’re not into the whole spinach thing you can definitely leave it out (I don’t blame you). The spices and mustard balance out the sweetness of the potatoes to create that familiar taste. This recipe is a good low-fat option if you’re craving this homestyle meal, but are on a diet. You can also go low-carb or gluten-free by using egg noodles, but I guess that would also defeat the whole purpose of the vegan thing.

 

Black Bean Veggie Burgers

Vegan burgers are my new favourite thing for some reason. Personally, I’m not a huge mushroom fan so that’s why I lean towards black bean burgers because they generally don’t have mushrooms in them. These burgers cook best on a pan with little bit of oil because they’re not super firm, but if you had a grill mat you could definitely use a barbeque. Black bean burgers are also the easiest burgers to make. You also want to make sure that the heat isn’t too high because the outside of these burgers cooks much faster than the outside.

Lentil Tacos with Avocado Cilantro Sauce

Who doesn’t love tacos? These lentil tacos are so easy to make, they are full of delicious spices, the tomatoes and mango add freshness to the dish and sweetness. The creamy avocado cilantro sauce finishes off these tacos nicely, I could easily eat like six of these. You can assemble these tacos on warm flour tortillas, corn tortillas (to keep them vegan), or you use fried taco shells (which would be delicious). These tacos make the perfect fresh, summer meal.
